Why is pizza better from wood burning pizza oven?

There is no big secret to this. A wood-fired pizza oven heats up and cooks our meals a lot better because of the heat stored in the dense walls. This heat radiates across the dome very evenly while the floor of the oven is slightly cooler than the top under which we place our meals. When the oven gets really white hot inside, for certain types of pizza the baking temperature can be far above 300C or 350C and maintained by keeping a continuous small fire going.

It’s in this environment that a great pizza is made.

Our Cheese

Our cheese is manufactured naturally, without artificial additives or colouring. There is no animal-rennet present on the partially skimmed milk, making it suitable for vegetarians and low fat users alike. We believe that the use of natural cheese has put us ahead of some competitors who have begun using fillers, vegetable oils and synthetic proteins. We believe natural ingredients are important, not only because of the world trend back to natural products and away from products with artificial ingredients (often catering for the low fat market), but also natural cheeses are more digestible. How to make pizza healthy for you!

There’s now good news for pizza lovers. According to Men’s Health magazine, research concludes that pizza can be good for you. We’re talking about real pizza made with real tomato sauce and olive oil. Scientists writing in the European Journal for Clinical Nutrition found that eating pizza can reduce your risk of a heart attack. In a 4-year study of nearly 1,000 Italians, those who ate pizza at least once a week were 30 percent less likely to experience a heart attack than the folks who didn’t partake. This is contributed to pizza’s cardio protective ingredients, including olive oil and tomato sauce. Here’s the secret: top the pizza with vegetables, part-skim cheese and thin crust and you’ve got a meal that is actually good for you.

Tomato as a power food

With 35 calories, a medium tomato provides 50% of the recommended daily allowance of vitamin C and 20% of vitamin A. More importantly, tomatoes are great sources of the antioxidant lycopene – the carotenoid that gives tomatoes, pink grapefruit, watermelons and guava their red tones. Research has shown lycopene from tomatoes could help reduce the risk of several diseases. Antioxidants like lycopene – and its cousin beta carotene, also found in tomatoes – help prevent oxidative cell damage, which could explain their disease fighting role. Eating tomatoes and tomato paste-topped pizza more than twice a week within moderation can reduce the risk of prostate cancer by 21% to 43% according to Dr. Edward Giovannucci of the Harvard University School of Public Health. Cooking tomatoes in oil encourages intestinal absorption and results in a two-to-threefold rise in plasma lycopene concentrations. Tomato paste is one of the best lycopene sources. Lycopene is an inhibitor to heart disease. Cooking sometimes destroys nutrients in fruits and vegetables, but not lycopene. In fact, research shows lycopene is more usable in processed, cooked tomato products like ketchup and Pizza topping sauce.
